2-4 medium potatoes
1 small can coconut milk
1/4 c red onion
1-2 c kale
2-4 cloves garlic
*Fresh herbs to taste – optional*
Cut potatoes into bite sized pieces. Steam on high until potatoes are tender when poked with a fork. *Optional – add fresh herbs to the water while steaming. I used chives, parsley, lemon verbena, and sage.
In a medium sauce pan, add a small amount of coconut oil (or water if you want your recipe oil free). Sauté minced garlic and chopped onions until slightly brown. Add shredded kale and continue to sauté in medium to low heat until kale has softened. Skim off coconut milk from can and add to pan. Simmer on low for 3-5 minutes. Season to taste. I used salt, pepper, dill, and oregano.
Add potatoes to plate. Season to taste. I used salt, pepper, and dill. Add coconut kale sauce and enjoy!
